L’Antic Moli 

Located in the charming municipality of Ulldecona in Southern Catalonia L’Antic Moli offers a calm, relaxing retreat from which to sample some of the finest traditional cuisine. Meaning “The Old Mill”, L’Antic Moli opened its doors in 2004. The immensely talented Vicent Guimerà is the chef and architect of the restaurant, and he gained his first Michelin star in 2017. The restaurant was also awarded a coveted Michelin Green star in 2020 for its commitment to sustainability.  

Michelin star chef Vincent Guimerà offers a diverse menu, from the traditional recipes of his grandmother’s kitchen to innovative creations using advanced culinary techniques. One of the most innovative Michelinstarred restaurants in Spain, the ethos behind L’Antic Molí is their commitment to the slow food movement. This focus on organic products and on strong links with the local “Terres de l”Ebre” area guarantees the finest produce, whilst reducing emissions and farmers costs.

Michelin-star chef: Vicent Guimerà  

Previously named Chef of the Year of Catalonia by Vanguardia and the Forum Gastronomique (2016) Vicent is a proud third generation chef. When asked about how he started out, he told us “I am the third generation of hospitality on my family. When I was 18 years old, I was already working with my parents and the opportunity to put myself in the head of the kitchen. That was where I started my first steps in this world.” His parents were a key inspiration for his love of food and he tells us that their example of “hard work and perseverance” is something that deeply inspired him in his career. 

On becoming a Michelin star chef in 2017 Vicent says “I felt very motivated and nervous at the same time. It was not something what I was looking for, however I felt very grateful that we were recognized for the good work of the team. It was very exciting.” 

Two spaces, one philosophy 

When asked what diners can expect, Vicent explains We have two spaces in the same restaurant. In the Bistro Area we find a more traditional cuisine with a food scene that’s cutting-edge, constantly evolving, and endlessly exciting. In the Michelin Area we offer a gastronomic experience full of emotions, combining ingredients from the territory, craftsmanship and sustainability.” He describes the philosophy behind L’Antic Moli as “Family, work, perseverance and passion.” 

 Inspired by the local surroundings 

“By promoting the circular economy of the area, we get dishes with unique designs created especially for us by local artisans” says Vicent. “With food grown on site, we have our own ecological garden with biodynamic agriculture with which we are self-sufficient.” 

The menu  

Vicent Guimerà describes his signature food style as “Country Kitchen.” Expanding on this description he says “We are inspired by the products of the area, the local artisans and the sustainability of the territory. We take advantage of ingredients that our land gives us.” 

An innovative tasting menu features plates such as mussels with pickled, vermouth and olives, chicken with olives, beef heart tomato and chestnut mushrooms and Joselito ribs with parsnip, peanuts and mustard. L’Antic Moli also boasts a thoughtful vegan menu, skillfully prepared by this Michelin star chef. Expect aromas, smells, flavors, sensations, contrasts and textures, all arranged for the most demanding palates.

The Slow Food movement  

Hugely important to Vicent Guimerà and L’Antic Moli, the Slow Food movement is a global, grassroots organization, founded in 1989 to prevent the disappearance of local food cultures and traditions. Aiming to counteract the effects of modern life on food choices and educate about how these choices affect the world around us, Slow Food has grown into a global movement involving millions of people in over 160 countries. All are working towards ensuring that everyone has access to good, clean and fair food.  

The movement believes that food is tied to many other aspects of life, including culture, politics, agriculture and the environment, and that through our food choices and working together, we can positively influence how food is cultivated, produced and distributed.
